脱氢醋酸(DHA)是一种食品防毒剂,与我国现有的防霉剂如苯甲酸等相比,它具有有效pH宽,防霉作用较强等优点。鉴于DHA早已被美国、日本、西德等国使用。国内经过近10年的研究,结果令人满意,不久也将有商品投入市场。现将国内外有关DHA的研究情况综述如下。一、DHA的一般性质DHA的化学名为3—乙酰基—6—甲基—脱(2)氢吡喃—脱(3)氢二酮,分子量为168.1,淡黄色粉末,易溶于甘油、丙酮等有机溶剂难溶于水,其溶液无色无味无嗅,并在20~130℃
