目的掌握达州市市售食品中食源性致病菌污染状况。方法在全市监测网点抽检8类食品,开展沙门菌等8种食源性致病菌的监测。结果 8类食品中食源性致病菌总体检出率为12.28%,检出食源性致病菌的食品包括肉制品7.84%、焙烤食品6.45%、凉拌菜6.67%、熟制米面制品15.66%、婴幼儿配方食品51.22%及皮蛋10.00%;调味酱18份,果蔬类52份未检出食源性致病菌。结论达州市市售食品中食源性致病菌存在一定的检出率,提示食品在加工及销售等过程中应采取有效的卫生措施,防止污染,减少食源性疾病的发生,提高食品安全性。
Objective To know the status of food-borne pathogenic bacteria in commercial food in Dazhou. Methods Eight kinds of food samples were collected from the monitoring stations in the whole city to monitor 8 kinds of foodborne pathogens such as Salmonella. Results The overall detection rate of food-borne pathogens was 12.28% in 8 kinds of foodstuffs. The foodstuffs of food-borne pathogens including 7.84% of meat products, 6.45% of baked goods, 6.67% of cold vegetables and 15.66 of cooked rice products %, Infant formula 51.22% and preserved egg 10.00%; seasoning sauce 18, 52 were not detected foodborne pathogens. Conclusion There is a certain detection rate of food-borne pathogens in Dazhou food, which indicates that food should take effective sanitary measures during the process of processing and selling to prevent pollution, reduce the occurrence of food-borne diseases and improve food safety Sex.
