按照我国食品卫生标准规定的细菌学指标,对采自我省两个主要城市石家庄、保定两市的240份鲜猪肉样品进行了菌落总数、大肠菌群数以及致病菌的检测。结果表明,所检测的猪肉样品超市菌落总数及大肠菌群普遍偏高,农贸市场污染较为严重,致病菌检出率在30%以上,急需在生猪屠宰加工、分割包装、运输销售环节研究建立栅栏技术。
In accordance with the bacteriological criteria stipulated in China’s food hygiene standards, 240 samples of fresh pork collected from two major cities of Shijiazhuang and Baoding in our province were tested for colony counts, coliform bacteria and pathogenic bacteria. The results showed that the total number of supermarkets and coliforms detected in pork samples were generally high, and the pollution in farmer’s market was more serious. The detection rate of pathogenic bacteria was above 30%, which was urgently needed in the study of slaughter and processing, packaging and transportation of pigs Fence technology.
