目的分析太原市食(饮)具消毒状况,为规范企业提供可靠依据。方法随机抽取太原市的86家大型餐饮单位和14家快餐店作为监督对象,现场随机抽取各单位消毒后准备使用的各类食(饮)具监测大肠菌群数,抽取30家进行食品安全餐用具洗消状况调查。抽取样品共1 000件,按照存放位置、餐饮单位的规模和用途等不同分三方面进行分析。结果存放于厨房操作台或储物架、餐厅餐台、保洁柜内的样品合格率依次递增;经营规模与餐具消毒监测合格率成正比;餐具合格率远远高于工用具合格率,经χ2检验,监测结果差异有统计学意义。30家单位按照“餐饮服务食品安全餐用具洗消状况评定表”的内容,进行评定打分,均分85.3。结论影响食(饮)具消毒效果的因素有消毒、保洁和企业的资金投入和重视程度等多方面的因素。
