肴肉在镇江又称为水晶肴蹄,是维扬菜系中的一道名菜,但合格率一直不高,保质期短。 1993年我站对肴肉生产经营单位进行了卫生学调查分析,为今后改进工作,加强卫生管理提供依据。
Meat in Zhenjiang, also known as crystal dishes hoof, Weiyang cuisine is a famous dish, but the pass rate has not been high, short shelf life.
