目的以κ-卡拉胶为研究对象,以黏度为指标考察流变学性质。研究放置时间、浓度、温度和阳离子种类对黏度的影响。方法采用旋转黏度计测定黏度,通过对流变曲线进行幂律方程(Power law)拟合,确定流体流型;根据阿伦尼乌斯(Arrhenius)公式计算黏流活化能(Eη),考察黏度与温度关系。结果卡拉胶溶液的黏度随剪切速率的增大、温度的升高而减小,而随浓度的增加而增大,且黏流活化能与浓度正相关;加入不同种类阳离子后,黏度变化明显,其中KCl对黏度的影响最为显著。结论卡拉胶溶液是假塑性流体,具有剪切稀化的特点;它的黏度受阳离子种类影响显著。
The purpose of κ-carrageenan as the research object, viscosity as an index to examine the rheological properties. The effects of storage time, concentration, temperature and cationic species on viscosity were studied. Methods Viscosity was measured by rotating viscometer. The flow pattern was determined by power law fitting to the rheological curve. The viscous flow activation energy (Eη) was calculated according to Arrhenius formula. Viscosity and Temperature relationship. Results The viscosity of carrageenan solution decreased with the increase of shear rate and temperature, but increased with the increase of concentration, and the activation energy of the viscous flow was positively correlated with the concentration. The viscosity of the carrageenan solution changed significantly after adding different kinds of cations , Of which KCl on the viscosity of the most significant impact. Conclusion Carrageenan solution is a pseudoplastic fluid with shear thinning characteristics; its viscosity is significantly affected by the type of cation.
