目的了解浙江省市售鲜冻畜禽肉类中硝基呋喃代谢物残留情况。方法在浙江省12个地区主要农贸市场和超市采集5种不同鲜冻畜禽肉类样品424份,进行4种硝基呋喃代谢物残留的超高效液相色谱串联质谱法(UPLC-MS/MS)检测。结果不同代谢物在不同样品基质中的添加回收率在74.1%~117.4%之间,变异系数在4.41%~9.98%之间,能满足样品分析的需要。5种不同鲜冻畜禽肉类中仅在鸡肉中检出5-吗啉甲基-3-氨基-2-恶唑烷基酮(AMOZ),检出率3.33%(6/180)。鸡肉样品合格率为96.67%(174/180),肉类总合格率为98.58%(418/424)。结论浙江省鲜冻畜禽肉类中硝基呋喃代谢物残留得到了较好控制,但是硝基呋喃代谢物残留还有发生,特别是养鸡业,仍不能放松对畜禽肉类中硝基呋喃代谢物残留的监控工作。
Objective To understand the residues of nitrofuran metabolites in fresh-frozen livestock and poultry meat in Zhejiang Province. Methods 424 samples of meat samples from 5 different fresh-frozen livestock and poultry were collected from 12 major farmers’ markets and supermarkets in Zhejiang Province. Results The recoveries of different metabolites in different sample matrices ranged from 74.1% to 117.4% and the coefficients of variation ranged from 4.41% to 9.98%, which could meet the needs of sample analysis. Among 5 kinds of fresh frozen livestock and poultry meat, 5-morpholinomethyl-3-amino-2-oxazolidinone (AMOZ) was detected only in chicken meat and the detection rate was 3.33% (6/180). The passing rate of chicken samples was 96.67% (174/180), the total passing rate of meat was 98.58% (418/424). Conclusion The residues of nitrofuran metabolites in fresh-frozen livestock and poultry meat in Zhejiang Province have been well controlled, but there are still some residuals of metabolites of nitrofurans. In particular, the chicken industry still can not relax the nitro group Furan metabolite residues monitoring work.
