目的了解怀化市市管餐饮单位餐饮具消毒状况,为提高餐饮具消毒管理提供依据。方法对2005-2009年怀化市市管餐饮单位连续5年间餐饮具消毒检测数据及有关的现场卫生监督检查资料进行调查分析。结果 5年间市管餐饮单位餐饮具消毒检测合格率逐年提高;以餐饮量化分级不同卫生信誉等级比较,A级餐饮具消毒合格率最高,B级、C级次之;按不同消毒方法比较,高温蒸汽消毒合格率最高、电子消毒柜消毒及化学消毒剂次之。结论五年来怀化市市管餐饮单位消毒合格率逐年提高,但总消毒合格率不高,须采取综合措施加强对餐饮单位的餐饮具消毒监管。
Objective To understand the disinfection status of catering tableware in Huaihua City and provide the basis for improving the disinfection management of tableware. Methods The data of disinfection test of tableware in 2005-2009 and the data of on-site health supervision and inspection of the tableware in Huaihua City for five consecutive years were investigated and analyzed. Results The qualified rate of disinfecting and testing of catering appliances in urban management units increased year by year in five years. According to the classification of food and beverage, the qualified rate of A-grade tableware disinfection was the highest, followed by Grade B and C, and by different disinfection methods, The highest rate of steam sterilization, disinfection of electronic disinfection cabinet and chemical disinfectants second. Conclusion The qualified rate of disinfection of food and beverage units in Huaihua City has been increasing year by year over the past five years, but the pass rate of total disinfection is not high. Comprehensive measures must be taken to strengthen the supervision and control over the disinfection of catering equipment.
