目的了解宜兴市各类饮食业单位食具消毒质量状况,为提高食具消毒质量提供依据。方法对2008年宜兴市273户饮食业单位食具消毒效果监测数据进行统计分析。结果宜兴市2008年饮食业单位食具消毒总合格率为62.62%;大中型酒店餐具消毒合格率为73.55%,学校食堂为70.65%,小型饮食店为54.16%,差异有统计学意义(p<0.001);城区饮食业单位餐具消毒合格率为64.33%,乡镇为61.28%,两者差异无统计学意义(p>0.05);A级单位的餐具消毒合格率(88.31%)>B级(64.89%)>C级(51.98%),三类等级间差异有统计学意义(p<0.001);蒸汽消毒合格率(85.52%)>消毒柜(70.62%)>化学消毒剂浸泡(57.24%),差异有统计学意义(p<0.05)。结论宜兴市饮食业单位食具的消毒质量总体不高,卫生部门应加强监督管理。
Objective To understand the quality of utensils disinfection of various catering units in Yixing City, and to provide the basis for improving the disinfection quality of utensils. Methods A total of 273 catering units in Yixing City in 2008 disinfection monitoring results were statistically analyzed. Results The total qualified rate of food utensils disinfection in catering units was 62.62% in 2008 in Yixing City. The qualified rate of sterilizing tableware was 73.55% in large and medium-sized hotels, 70.65% in school canteens and 54.16% in small restaurants, with significant difference (p <0.001 ); Tableware disinfection rate of urban catering units was 64.33%, township was 61.28%, there was no significant difference between the two (p> 0.05); Class A units tableware disinfection pass rate (88.31%)> B (64.89% (P <0.001); steam pass rate (85.52%)> disinfecting cabinet (70.62%)> chemical disinfectant soaking (57.24%), the differences were statistically significant Statistical significance (p <0.05). Conclusion The quality of disinfection of utensils of catering units in Yixing City is generally not high, and the health department should strengthen supervision and management.
