目的掌握北京市密云县餐饮单位餐具消毒状况,促进餐具消毒工作,保障人民群众身体健康。方法于2010—2011年在密云县辖区内委托检测的餐饮单位,随机抽取消毒后准备使用的各类餐具,用快速纸片法检测大肠菌群。结果在557家餐饮单位采集样品2 526份,合格户数551家,户数合格率96.8%;合格份数2 515份,合格率99.6%。大型餐馆、快餐店、饮品店和食堂的消毒效果合格率为100.0%,中型餐馆、小型餐馆和小吃店的消毒效果合格率分别为99.7%、99.5%和98.4%。集中消毒、电子消毒柜、化学消毒的合格率分别为100.0%、99.8%和97.9%。结论密云县餐饮单位的餐具消毒效果良好。
Objective To master the disinfection of tableware in catering units in Miyun County, Beijing, to promote the disinfection of tableware and ensure the health of the people. Methods From 2010 to 2011, food and beverage companies entrusted with testing within the jurisdiction of Miyun County were randomly selected to prepare all kinds of tableware to be used after disinfection, and coliforms were detected by fast disc method. Results A total of 2 526 samples were collected from 557 catering establishments, with 551 qualified households, with a pass rate of 96.8% and a pass rate of 2 515. The pass rate was 99.6%. The pass rate of disinfection of large restaurants, fast food shops, drink shops and canteens was 100.0%. The pass rate of disinfection of medium-sized restaurants, small restaurants and snack bars was 99.7%, 99.5% and 98.4% respectively. The qualified rate of centralized disinfection, electronic disinfection cabinet and chemical disinfection were 100.0%, 99.8% and 97.9% respectively. Conclusion Tableware disinfection of catering units in Miyun County is good.
