A recent study found that two common emulsifiers, carboxymethylcellulose and polysorbate-80, found in ice cream, chocolate bars, and other packaged foods, may cause some chronic inflammatory diseases. Researchers in mice fed these two emulsifiers found that the incidence of metabolic diseases and enteritis in mice increased. Research shows that the ingredients cause damage to the body by damaging the barrier between the immune system and the microbial flora - which are also found in the human gut. Gut microbes help humans fight infections and allergies, but do not want them to come into contact with the intestinal mucosa.
