为优化电导率法快速测定小麦中灰分的条件,选择河南产地小麦为样品,研究了超声波处理样品的温度、时间、样品粒度、料液比和pH等因素对小麦提取液电导率值的影响,并对同一品种不同贮藏时间和产地的小麦灰分含量与电导率间的关系进行了分析.在单因素试验基础上,用响应曲面法对影响电导率测定的3个主要因素进行了优化,建立了相应的数学模型.结果表明:响应曲面优化提取小麦粉的最佳条件为超声温度49℃±1℃,超声时间3.55 h,料液比1 g∶400 mL,灰分与小麦储藏时间关系曲线二次方程的相关系数为0.762 2,产地和灰分之间相关系数为0.903 0.
In order to optimize the condition of wheat ash by electric conductivity method and select wheat from Henan province as sample, the effects of ultrasonic treatment on temperature, time, sample size, ratio of solid to liquid and pH on the conductivity of wheat extract were studied. The relationship between wheat ash content and electrical conductivity in different storage time and place of production of the same variety was also analyzed.On the basis of single factor experiment, three major factors influencing the conductivity measurement were optimized by response surface methodology The results show that the optimal conditions for wheat flour extraction by response surface optimization are as follows: the ultrasonic temperature is 49 ℃ ± 1 ℃, the ultrasonic time is 3.55 h, the feed liquid ratio is 1 g: 400 mL, the relation between ash and wheat storage time is quadratic equation The correlation coefficient is 0.762 2, the correlation coefficient between origin and ash is 0.903 0.
