目的:同时对苹果中上述三种主要糖进行定量分析。方法:采用核磁共振波谱分析技术,确定了苹果中葡萄糖、果糖和蔗糖在重水中的各种构型,归属了苹果中葡萄糖、果糖和蔗糖的质子核磁共振谱的主要特征峰,以邻苯二甲酸氢钾作内标。结果:葡萄糖、果糖和蔗糖测定结果的相对标准偏差分别为4.2%、4.4%、5.1%,回收率分别为97.4%、96.6%、96.5%。结论:该法取样量少,直接定量,所得结果重现性好、准确度高,为苹果的品质鉴定提供一种简单可行的方法。
Objective: To quantitatively analyze the three main sugars in apple at the same time. METHODS: Various configurations of glucose, fructose and sucrose in heavy water were determined by nuclear magnetic resonance spectroscopy. The main characteristic peaks of proton nuclear magnetic resonance spectra of glucose, fructose and sucrose were assigned to apple. Potassium hydrogen formate as an internal standard. Results: The relative standard deviations of glucose, fructose and sucrose were 4.2%, 4.4% and 5.1%, respectively. The recoveries were 97.4%, 96.6% and 96.5%, respectively. Conclusion: The method of sampling a small amount of direct quantitative, reproducible results with high accuracy, providing a simple and feasible method for apple quality identification.
