目的了解水产品中常见菌群分布,筛选优势菌群作为质控品干扰菌,构建水产品质控品的基质样。方法对三类样本(海水、塘水和市售四种鱼)进行沙门氏菌、志贺氏菌、单增李斯特菌、致病性大肠杆菌、金黄色葡萄球菌、弧菌科等细菌的分离鉴定,并对调查资料进行统计分析。结果 82份样本中70份分离到肠道病原菌,检出率为85.36%。分离到3个科的17种菌,除肠致病性大肠杆菌和金黄色葡萄球菌外,其余15种菌均属致病性弧菌。根据分离菌的检出率和特性,确定模拟水产品质控品的基质样中干扰菌由检出率和构成比较高的溶藻弧菌、拟态弧菌、金黄色葡萄球菌、温和气单胞菌、类志贺单胞菌、荧光假单胞菌等组成。结论根据水产品不同细菌检出率和构成比配制出的水产品质控品的基质样,与水产品的真实状况极为接近。
Objective To understand the distribution of common microflora in aquatic products and screen the dominant microflora as a control substance for interfering bacteria to construct the matrix samples for quality control of aquatic products. Methods Three types of samples (seawater, pond water and four commercially available fish) were isolated and identified from bacteria such as Salmonella, Shigella, Listeria monocytogenes, pathogenic Escherichia coli, Staphylococcus aureus and Vibrio spp. And statistical analysis of the survey data. Results 70 out of 82 samples were isolated from enteric pathogens, the detection rate was 85.36%. Isolated 17 strains of three families, in addition to enteropathogenic E. coli and Staphylococcus aureus, the remaining 15 kinds of bacteria are pathogenic Vibrio. According to the detection rate and characteristics of the isolates, it was determined that the matrix-like interfering bacteria in the simulated aquatic product quality control were identified by the detection rate and Vibrio alginolyticus, Vibrio mimicus, Staphylococcus aureus, Bacteria, Shigella, Pseudomonas fluorescens and other components. Conclusion Based on the detection rate and composition ratio of different bacteria in aquatic products, the matrix samples of aquatic quality control products are formulated to be very close to the true status of aquatic products.
