满汉全席是中国古典宴席中场面最大、规模最盛、耗资最多的宴席,它兴起于清代,由108道满菜和汉菜组成,集南北名菜和佳肴之大成,味道之美,色形之佳,原料之精均达到了登峰造极的地步。满汉全席用料以燕窝、鱼翅、海参、鲍鱼、鱼肚、熊掌、驼峰等水陆八珍,辅之以凉菜、面点、果品、蜜饯等,仅满州饽饽一项面点就有44道花色品种,需用面粉23公斤。清人有记载满汉全席的菜名:“燕窝鸡丝汤、海参汇猪筋、鲍鱼翅蟹羹、鱿肚煨火腿、鲫鱼舌汇熊掌、蒸驼峰、梨片伴果子狸、鸡笋粥、芙蓉蛋……”不胜奢靡。曹雪芹对于大观园夜宴的描写,也可让我们见满汉全席盛大丰富之一斑。可以说,满汉全席是集中华数千年饮食精华的巅峰之作。
