本文报告了小学生课间加餐食品的研制方法及结果。通过对昆明市城、郊小学生进行抽样营养调查,了解到本市小学生家常膳食中蛋白质、钙、维生素A、B_1、B_2普遍供给不足、脂肪供给过多、三餐热量分布不合理等缺陷,设计出以鲜牛奶、大豆粉为基质的针对性食品。经人体实验、效果验证、配方改良,研制出符合营养学原则的加餐食品,对弥补散居小学生家常膳食的营养缺陷起到积极的作用。
This article reports on the methods and results of primary school students’ food preparation during recess. Based on the sampling and nutrition survey of primary and secondary school students in Kunming city and suburban area, the author found out that the primary school students in primary school have not enough supply of protein, calcium, vitamin A, B_1 and B_2, too much fat supply and irrational caloric distribution of three meals. Out to fresh milk, soybean meal-based foods targeted. After human experiment, effect verification and recipe improvement, the catering food which accords with the nutrition principle has been developed, which plays a positive role in remedying the nutritional deficiencies of diathesis home-cooked meals.
