一、绪言我国长江流域所栽培的甜瓜,从果实的特性来讲,可以分为三类。第一类是香甜瓜(Cucumis melo var.makuwa Makino),以它的生物学上成熟的果实为食用,果皮(俗称果肉)清脆,含糖量高,有香昧,适于生吃。如杭州的“黄金瓜”。第二类是越瓜(Cucumismelo var.conomon Makino),亦以生物学上成熟的果实作为生食用,但其含糖量很低,含水量特别多,果实没有香味,果皮质地清脆,如杭州的“白皮梢瓜”。第三类是菜瓜(Cucumis melo var.Flexuosus Naud.)以其幼嫩的果实作为食用的,主要是作为盐渍或糖渍加工成酱瓜用。果实不香不甜,但经过加工后,清脆可口,如杭州的“青皮菜瓜”。
I. INTRODUCTION Melon cultivated in the Yangtze River valley of our country can be divided into three categories according to the characteristics of the fruit. The first category is the melon (Cucumis melo var. Makuwa Makino), eaten with its biologically mature fruit, peel (commonly known as pulp) crisp, high sugar content, fragrant, suitable for raw. Such as Hangzhou’s “golden melon.” The second is Cucumber (Cucumismelo var. Economon Makino), but also the biological maturity of the fruit as a raw food, but its very low sugar content, especially the amount of water content, the fruit is not scented peel crisp texture, such as Hangzhou “White skin melon.” The third category is Cucumis melo var. Flexuosus Naud., Which is eaten with its young fruits and is mainly processed into pickled cucumber as salted or candied. Fruit is not sweet and not sweet, but after processing, crisp and delicious, such as Hangzhou’s “green peel melon.”
