郑州8603优质小麦,是河省南农科院小麦所从中国农科院作物所杂交培育的京作8131—1优质红粒春小麦品种中,选出的白色、大粒株系而育成的一个营养品质和加工品质兼优的小麦新品系。其株高90厘米左右,茎杆硬韧、抗倒伏,幼苗长势壮,生长发育快,较早熟。该品系属春性,对光温反应不敏感,抗条锈病和白粉病。籽粒白色,千粒重47.4克左右,粗蛋白质含量17%左右,是目前国内小麦品种中蛋白质含量较高的一个新品系。
