目的查找食物中毒的原因,预防类似食源性疾病的再次发生。方法按食物中毒发生的调查方法,对患者和进食者进行流行病学调查,对现场环境卫生和烹调加工过程进行调查,并采集现场剩余食物、刀具案板及部分患者、食品从业人员的肛拭样本进行致病菌检测。结果在4份剩余食物、5份肛拭、2份刀具案板中检出奇异变形杆菌,其中3份剩余食物中奇异变形杆菌近似数均大于105CFU/g。结论根据流行病学调查及实验室检验分析,本次食物中毒是由奇异变形杆菌污染食物导致。
Objective To find out the causes of food poisoning and prevent the recurrence of similar food-borne diseases. Methods According to the investigation method of food poisoning, epidemiological investigation was carried out on patients and food consumers to investigate on-site environmental sanitation and cooking process, and to collect samples of remaining food on the site, cutting board and some patients, samples of anal swabs from food practitioners Pathogen detection. Results Proteus mirabilis was detected in four remaining food samples, five anal swabs and two chopping boards. The approximate number of Proteus mirabilis among the three remaining samples was more than 105 CFU / g. Conclusion According to epidemiological investigation and laboratory analysis, this food poisoning is caused by the contamination of food by Proteus mirabilis.
