古人云:“民以食为天”。众所周知,禽肉自盘古开天辟地以来一直是人们品尝的佳肴。伴随着禽肉功能性、营养性、多样性的需求,禽产品深加工的重要性和迫切性在我国逐渐成熟的市场经济中日益凸现.而我国的家禽生产虽近20年来迅猛发展,但禽产品加工仍相对滞后。本文仅就禽肉制品的现状,存在问题,发展方向作了一些粗浅的分析,旨在抛砖引玉,希望有关专业科研人员和广大读者踊跃参与《禽产品加工》栏目,畅抒己见指点迷津,也不妨介绍一些有市场前景的加工产品、国内外先进的加工工艺。流行包装等等,以共同探讨禽产品加工,共同关注禽产品市场的发展。
The ancients said: “People use food as their day”. As we all know, poultry meat has been a delicacy for people since the ancient times. With the demand of functional, nutritional and diversity of poultry meat, the importance and urgency of deep processing of poultry products are increasingly emerging in China’s gradually mature market economy.
