硼砂在中国是代代相传的优良食品改良剂、保鲜剂,增加食物的齿感嚼劲、色泽香味,兼而保鲜。一些祖传食品的所谓秘方,硼砂是不可或缺的宝物。可是,传统的未必就是安全的,世代皆如此的未必就是应该发扬光大的,这从远古走来,口口相传的硼砂就是典型例子。硼砂学名为四硼酸钠,其实验动物急性毒性仅只低毒至微毒,但于人类,则显示出了更暴烈的急性毒性,成人中毒剂量为1克至3克,成人致死量为15克。
