目的:调查了解某部机关食堂采购食品和餐饮具卫生检测情况。方法:根据随机抽样原则抽取样品,按照《军队食品安全风险监测技术手册》相关要求,针对不同食品类别进行相关检测,并将检测结果与监测方案标准限值进行对照。结果:(1)共采集食品样品634份,检出不合格样品35份,合格率94.48%,其中酒和饮料、乳及乳制品合格率为100.00%,畜禽肉及其制品为97.10%,水产品为96.15%,蔬菜水果为95.24%,谷物及其制品为95.00%,食用油和调味品为89.19%,豆及豆制品为87.80%。(2)共抽检餐饮具304份,其中洁净度合格278份,合格率为91.45%。结论:某部食堂采购食品安全性总体较高,但仍需要加强监测和监督管理。
Objectives: To investigate and understand the hygiene inspection of food and tableware purchased by an authority canteen. Methods: Based on the principle of random sampling, samples were taken and related tests were conducted for different food categories according to the relevant requirements of the “Technical Manual for Food Safety Risk Monitoring in the Army” and the test results were compared with the standard limits of monitoring programs. Results: (1) A total of 634 samples of food were collected and 35 samples were rejected, the pass rate was 94.48%. The passing rate of wine and beverage, milk and dairy products was 100.00%, that of livestock and poultry meat and products was 97.10% 96.15% for aquatic products, 95.24% for vegetables and fruits, 95.00% for cereals and their products, 89.19% for edible oils and condiments, and 87.80% for beans and soy products. (2) A total of 304 sampling tableware, of which 278 were pass the cleanliness, with a pass rate of 91.45%. Conclusion: The food safety of a department canteen is generally high, but monitoring and supervision still need to be strengthened.
