近二、三十年来,国际市场对罐藏甜玉米的需求量日益增加。为了填补国内空白,出口甜玉米罐头,我所与上海梅林食品罐头厂合作,进行甜玉米育种和制罐研究。据制罐品质分析,甜玉米采收期与罐头品质关系甚大。采收过早,罐头风味差,色浅乳质薄,玉米产量也较低;采收过迟,淀粉含量过高,果皮硬,乳质粘厚,罐头风味也较差。因此,确定罐藏甜玉米的采收适期至关重要。目前确定采收适期的方法,主要有:观察籽粒形态;测定籽粒含水量;测定籽粒水溶性糖;离
In the past two or three decades, the demand for canned sweet corn in the international market has been increasing. In order to fill the gap in China and export sweet corn cans, I worked with Shanghai Meilin Food Can Factory to conduct research on sweet corn breeding and can making. According to the quality analysis of cans, sweet corn harvest has a great relationship with the quality of canned food. Harvest too early, canned flavor is poor, the color of the milk quality is light, corn yield is lower; harvest too late, starch content is too high, peel hard, milk thick sticky, canned flavor is also poor. Therefore, it is crucial to determine the appropriate harvesting period for canned sweet corn. At present, the methods for determining the appropriate harvesting period are as follows: observing the grain morphology; determining the water content of the grain; determining the water soluble sugar content of the grain;
