为探讨黑老虎(Kadsura coccinea)作为果用食物的营养价值,对采自云南省不同产地的野生黑老虎果实分别测定其果皮和果肉中的维生素C、可溶性固形物、氨基酸、粗纤维、蛋白质、总糖等含量,并进行比较分析。结果表明:野生黑老虎果实含有丰富的人体必需的氨基酸,4个种源中,以勐海的黑老虎果肉中各人体必需氨基酸总含量最高,为0.256%,其次是屏边种源,为0.106%,景东种源为0.094 3%,普文种源氨基酸总含量最少,为0.027 4%。黑老虎果实还含丰富的维生素C、粗纤维、蛋白质、总糖等。不同产地之间或单株之间各营养指标变化范围大,变异系数较高,优良种源或优良单株可选择性较强。果肉的养分灰关联度以勐海种源和第2单株最高,将作为备选优良种源和优良单株。
In order to investigate the nutritive value of Kadsura coccinea as fruit food, the contents of vitamin C, soluble solids, amino acids, crude fiber and protein in the peel and pulp of wild black tiger fruits collected from different areas of Yunnan Province were determined. Total sugar and other content, and comparative analysis. The results showed that the wild black tiger fruits contained abundant essential amino acids. Among the four provenances, black tiger flesh in Menghai had the highest content of essential amino acids of 0.256%, followed by the provenances at the edge of 0.106 %, Jingdong provenance was 0.094 3%, and the total content of provenances was the least, which was 0.027 4%. Black tiger fruit is also rich in vitamin C, crude fiber, protein, total sugar and so on. Different regions or between individual nutrition indicators of a wide range of variation, high coefficient of variation, excellent provenances or excellent single plant can be more selective. Gray relational grade of the flesh nutrient was the highest in Menghai provenances and the second single plant, which would be used as an alternative good provenance and excellent single plant.
