食用菌种是指人工培养的食用菌纯菌丝体,通常分为母种、原种和栽培种。母种是通过严格筛选,确认为生产上有价值的纯菌丝体。母种用试管斜面培养基培养,又称试管种或一级种。母种再扩繁转移到木屑或谷柱培养基上所得到的菌种,称为原种或二级种,培养容器多用罐头瓶或菌种瓶。由原种再扩繁的菌种称栽培种或三级种,即可直接用于生产栽培。
