目的:了解徐水县饮食单位凉菜制作间紫外灯强度,为提高凉拌菜质量提供依据。方法:对徐水县957家饮食单位凉菜制作间紫外灯强度监测数据进行统计分析。结果:徐水县饮食单位凉菜制作间紫外灯强度总合格率为71.16%。大中型酒店(饭店、餐厅)合格率为85.19%,学校食堂合格率为78.69%,小型饭店(餐厅)合格率为68.07%,差异有统计学意义(P<0.005)。结论徐水县饮食单位凉菜制作间紫外灯强度合格率总体不高,餐饮服务监督管理部门应加强监督和综合管理。
Objective: To understand the intensity of ultraviolet light in cold dish production of Xushui food unit, to provide the basis for improving the quality of cold salad. Methods: The data of UV intensity monitoring in the production of 957 food units in Xushui County were statistically analyzed. Results: The total qualified rate of UV lamp intensity in cold dish production of Xushui food unit was 71.16%. The passing rate of large and medium-sized hotels (restaurants and restaurants) was 85.19%, the passing rate of school canteens was 78.69%, and the passing rate of small restaurants (restaurants) was 68.07%. The difference was statistically significant (P <0.005). Conclusion The passing rate of ultraviolet lamp intensity of cold dish production in Xushui County catering unit is generally not high, and the catering service supervision and management department should strengthen the supervision and comprehensive management.
