芡实,睡莲科,芡属。果实为浆果,带刺,如鸡头状,故又名“鸡头”。芡实籽球形,淀粉质,可供食用或酿酒。种子每100克含水分13.6克,脂肪0.3克,淀粉75.5克,粗纤维0.2毫克,灰分0.6毫克,磷86毫克,钙39毫克,铁1.2毫克。其嫩茎可做蔬菜,根煮食味如芋。芡实籽亦可入药。全株可做饲料及绿肥。芡实分布在我国南北各地湖泊、池塘、滩地,但多属有刺野“鸡头”,籽粒小,粳性,品质差,栽培粗放,称为“北芡”。苏州芡实,又称“南芡”,产于苏州,
