香芋(Apios americana L.),豆科,草本植物,茎蔓生,长数尺至1丈有余。食用部分为块根,圆球形或不规则形,外皮棕黄色,肉鱼洁白。与天南星科的普通芋头(Colocasia esculenta)是完全不同的。香芋是我国传统的蔬菜,又是珍贵的蔬菜,约有几百年栽培历史。明朝徐光启《农政全书》中即有形如土豆、味甘美的记载,清代《授时通考》中也有“形如土豆”、煮熟可食的介绍。可见,它早已为我们的祖先所利用。但香芋产量低,平均亩产7~8担,占地时期又长,一般需6~7个月。目前近郊大面积栽培几乎绝迹,但在江、浙沿海地区,尤其是长江下游沿海区域分布较多。上海市崇明县,虽然是零星栽培,分布面却甚广。
