目的了解石家庄地区食物中重金属铅、汞、镉的含量状况及分布规律。方法样品均为石家庄地区县(市)市售常见食品,样品处理及测试采用国家标准方法(GB 5009.12.15.17)。结果处于铅污染水平的种类为皮蛋和猪肾,污染和重度污染的样本占总样本的比例分别为皮蛋70%、猪肾30%。镉污染主要为蔬菜、鲜食用菌,污染和重度污染水平的样本占检测样本比例为蔬菜20%、鲜食用菌20%;汞污染中,蔬菜、干食用菌的污染和重度污染水平的样本数占检测样本的比例分别为2.5%、20%。结论石家庄地区的主要膳食构成成分铅,汞、镉含量较安全。
Objective To understand the content and distribution of heavy metals Pb, Hg and Cd in food in Shijiazhuang area. Methods The samples were all common foods on the market of Shijiazhuang county (city), and the national standards (GB 5009.12.15.17) were used for the sample processing and testing. Results The types of lead contamination were preserved eggs and swine kidney. The proportion of contaminated and heavily contaminated samples in total samples were 70% of preserved eggs and 30% of swine and kidney respectively. Cadmium pollution is mainly vegetables, fresh edible fungi, pollution and heavy pollution levels of the sample samples accounted for 20% of vegetables, fresh edible fungi 20%; mercury pollution, vegetables, dry edible fungi pollution and heavy pollution levels The proportion of samples in the test sample was 2.5% and 20% respectively. Conclusion The main dietary components in Shijiazhuang are relatively safe in lead, mercury and cadmium.
