目的探讨引起某幼儿园食物中毒的原因。方法经现场流行病学调查获得病例的资料,应用描述性流行病学方法进行资料的分析。结果本次食物中毒事件平均潜伏期20h,病例的主要症状为腹痛、发热、腹泻等;在患儿粪便、肛拭子中分离到10株侵袭性大肠埃希菌,血清型为O136K78;同时在幼儿园厨房工作人员粪便中分离到1株侵袭性大肠埃希菌,血清型为O136K78。结论本次事件为一起因集体用餐导致的细菌性食物中毒事件,引起疾病的致病菌为侵袭性大肠埃希菌(血清型为O136K78)。结合卫生学调查结果,引起本次事件暴发的原因倾向于厨师为健康带菌者,中餐制作过程中,不注意个人卫生,造成污染。
Objective To explore the causes of food poisoning in a kindergarten. Methods The data of cases were obtained through the field epidemiological investigation, and the descriptive epidemiological method was used to analyze the data. Results The average incubation period of food poisoning incidents 20h, the main symptoms of the case for abdominal pain, fever, diarrhea, etc .; in children with stool, anal swab isolates of 10 invasive Escherichia coli, serotype O136K78; at the same time in kindergarten An invasive Escherichia coli was isolated from the faeces of the kitchen staff and the serotype was O136K78. Conclusion The incident was a bacterial food poisoning caused by the collective meal. The pathogen causing the disease was Escherichia coli (serotype O136K78). Combined with the findings of the hygiene survey, the cause of the outbreak of this incident tended to be chefs for healthy carriers. In the course of making Chinese meals, they did not pay attention to personal hygiene and caused pollution.
