目的了解2011─2013年新疆乌鲁木齐市餐饮业餐饮具的卫生状况,为餐饮服务卫生监督工作提供科学依据。方法依据《食(饮)具消毒卫生标准》(GB14934-1994)对乌鲁木齐市餐饮单位餐饮具消毒效果进行分析。结果3年共检测样品2 208份,合格1 631份,合格率73.87%,不同年份合格率差异有统计学意义(χ2=66.24,P<0.005);杯类、碗类、盘类、碟类、汤匙、筷子合格率分别为90.38%、78.20%、79.65%、86.62%、86.34%、88.24%,不同种类餐饮具合格率差异有统计学意义(χ2=358.33,P<0.005);大中型餐饮、小型餐饮、消毒公司、学校食堂、医院食堂、单位食堂,合格率分别为87.69%、33.04%、83.17%、69.52%、51.19%、73.68%,不同类型餐饮单位间差异有统计学意义(χ2=442.48,P<0.005)。结论乌鲁木齐市餐饮具监测合格率呈上升趋势,但总合格率仍处于低水平,因此食品卫生监督部门要加大监督管理力度,提高餐饮业的食品卫生安全水平,把住“病从口入”关,保证消费者的饮食安全。
Objective To understand the health status of catering tableware in Urumqi from 2011 to 2013 and to provide a scientific basis for health supervision of catering services. Methods According to “food (drinking) with disinfection health standards” (GB14934-1994) Urumqi, catering units tableware disinfection effect analysis. Results There were 2 208 samples (1 631 samples) qualified in 3 years. The pass rate was 73.87%. There were significant differences in pass rates in different years (χ2 = 66.24, P <0.005). Conclusion The qualified rate of monitoring of tableware in Urumqi is on the rise, but the total pass rate is still at a low level. Therefore, the supervision departments of food hygiene should intensify the supervision and management and raise the level of food hygiene and safety in the restaurant industry.
