头足动物种类繁多,分布广泛,渔获量大,资源十分丰富,是重要的经济海产。头足类动物常被加工为干品和冻品,加工的副产物,如内脏物、骨、皮、墨汁等约占总比例的30%,具有重要的药用价值。多糖类成分是头足动物副产物重要的活性成分,对于头足动物多糖类物质的开发研究,可综合利用海洋资源,变废为宝,具有良好的开发前景。本文对头足动物多糖资源及其在食品医药领域的应用进行综述。
Head and foot animals a wide range of widely distributed, catches large, very rich in resources, is an important economic and marine. Cephalopods are often processed into dry and frozen products. Processing by-products, such as viscera, bone, skin and ink, account for about 30% of the total, and are of great medicinal value. The polysaccharide component is an important active ingredient of the copepods of cephalopods. For the development and research of the cephalopods polysaccharides, it can make full use of the marine resources and turn waste into treasure, which has a good development prospect. This article reviews the resources of cephalopod animal polysaccharides and their applications in the field of food and medicine.
