随着人们生活水平的提高,一种新型蔬菜——芽菜已逐渐走上人们的餐桌,为菜肴增添了新花色,给人们带来了新口味。芽菜顾名思义,即某些粮食、蔬菜种子发的芽。人们早巳熟悉的绿豆芽、黄豆芽就是其中之一。目前,“芽菜”有了更广泛的内容,其中包括樱萝菜(萝卜芽)、银芽菜(白菜芽)、椿芽菜(香椿芽)等,同时还包括一些蔬菜幼苗,如豌豆苗、苜蓿苗、甘菊苗等。现列举樱萝菜为例,从几个方面简介一下情况:在营养学方面,芽菜是植物的“新生期”,储存在种子内的营养物质已被分解,易于吸收,许多酶类也被激活。据分析(见下表)樱萝菜中铁、铜、锌、锰的含量均高于青萝卜。
