船上渔获物的保鲜是非常重要的。这不仅关系到能否保证供应市场需要的新鲜的鱼品,而且也是保证陆上进行鱼品冷冻,加工质量的基础。本文重点对船上渔获物保鲜的重要性,各种鱼类在冷藏贮藏过程中生化方面的变化以及与温度的关系,目前各类渔船上采用的冷藏保鲜方法与比较,国外保鲜现状与发展概况等作了介绍和分析,并提出各类渔获物保鲜方法和温度的选择意见。对渔船制冷设备和冷剂的选用也提出了一定的分析和建议。
