脱臭蒜脯加工工艺 1、原料选择 选用成熟、干燥、有完整外衣、无虫蛀、无霉烂、无发热变质大蒜。要求蒜肉洁白,辛辣味足,剔除发芽的蒜。 2、处理 将蒜放入水中浸泡2—4小时,切蒂后剥除内衣。将所得蒜放在透气的容器中,存放在阴凉、通风、清洁、无尘、无蝇处。 3、漂洗 将剥皮的蒜粒放进篓中,用水漂洗干净,除去粘在蒜粒上的膜衣及其它异物。 4、除臭 茶煮,按茶水:大蒜=1:3的比例煮沸5分钟,立即捞出沥水,适当晾晒。此时要特别防止虫蝇叮咬,随即用清水漂洗。茶汁的配制:取用一般的粗茶叶,按茶叶:沸水=1:70的比例泡1—2小时,过滤即可。
