天鹰椒又名冲天椒、向天椒等,原产日本,1985年引进我国。其特点是:产量高、油质多、辣味浓,并含有丰富的营养成分,如蛋白质、钙、磷、铁等,还含有大量的维生素。维生素C的含量约为西红柿的九倍,在所有蔬菜中居于首位。既具有食用价值,又适宜加工,可制辣椒酱、辣椒油、盐淹辣椒、辣椒干、辣椒粉等终年食用,也可做调味品,是食用色素的主要来源之一。
