甜味剂是人类不可缺少的食品原料和食品添加剂,可分为天然的和人工合成的两大类.一些人工合成的甜味剂由于有致癌等副作用,已相继被停止生产,只有糖精还在有争议的暂时使用着.因此开发安全性高,资源丰富的天然甜味物质就更为重要了,而植物是最重要的甜味剂源.糖与糖醇天然甜味剂从植物中提取的最常见的天然甜味剂,莫过于我们经常食用的“糖”了,包括蔗糖、果糖、葡萄糖、麦芽糖等.蔗糖是以甘蔗和甜菜为原料生产
Sweeteners are indispensable food materials and food additives for human beings. They can be divided into natural and synthetic categories. Some synthetic sweeteners have been stopped production due to side effects such as carcinogenicity, and only sweeteners are still available. It is controversial for temporary use. It is therefore more important to develop safe, resource-rich natural sweeteners, and plants are the most important sources of sweeteners. Sugar and sugar alcohols are natural sweeteners extracted from plants. The most common natural sweeteners are those we regularly eat, including sucrose, fructose, glucose, maltose, etc. Sucrose is produced from sugar cane and sugar beets.
