在水稻紫米发育过程中,对花色素、类黄酮、多酚、苯丙氨酸解氨酶和多酚氧化酶进行提取和测定,并对测定的结果进行统计分析。分析结果表明:总酚和苯丙氨酸解氨酶的活性对花色素的偏回归系数不显著;类黄酮对花色素的偏回归系数达显著水平,多酚氧化酶的活性对花色素的偏回归系数达极显著水平,建立了最优二元回归方程。用标准偏回归系数测得类黄酮对花色素的相对影响占0.5723,多酚氧化酶活性对花色素的相对影响占0.5725。花色素与类黄酮和多酚氧化酶活性的复相关达极显著水平;类黄酮与多酚氧化酶活性的偏相关系数不显著。
Anthocyanidins, flavonoids, polyphenols, phenylalanine ammonia-lyase and polyphenol oxidase were extracted and determined during the development of rice purple rice, and the results were statistically analyzed. The results showed that the partial regression coefficients of total phenolics and phenylalanine ammonia-lyase activities on anthocyanidins were not significant. The partial regression coefficients of flavonoids on anthocyanidins reached a significant level. The partial correlation coefficient between flavonoids and polyphenol oxidase activity was not significant.
