莴苣,一名莴笋,别名千金菜,源自宋陶谷《清异录》:“千金菜,呙国使者来汉,今莴苣也”。用莴苣制作的菜肴,气味清香,口感脆爽,《调鼎集》中称:“食莴苣有二法:新酱者松脆可爱;或腌之为脯。切片食甚鲜,然必以淡为贵,咸则味恶也。”并介绍了“拌莴苣、酿莴苣、莴苣圆”等十一款的菜制作方法。扬州民间春末夏初有:“莴苣炒蛋”、“凉拌莴苣”、“莴苣炒肉丝”等诸多品种。笔者不揣浅陋,试作莴苣菜数款,公之《美食》,求教于大家。
