一、防癌。近年来,医学研究表明,蔬菜含有很多抗癌物质。美国纽约肿瘤研究中心用动物试验证明,蔬菜中的β-谷固醇有防止肿瘤形成的作用。当给动物饲以含0.2%的β-谷固醇饲料后,动物结肠上皮细胞增生比对照组降低50%,饲动物以致癌的N-甲基-N-亚硝基胍,再饲以β-谷固醇,只有1/3动物发生肿瘤,而对照组有1/2以上患肿瘤。因此,凡多吃蔬菜的居民,患癌症的就少。据报道,蔬菜中还含有抗癌素、干扰素诱生剂。
