目的了解解放军某部伙食单位餐(饮)具消毒状况,防止因餐饮具不洁引起食源性疾病。方法对解放军某部2006~2010年伙食单位餐(饮)具消毒效果监测资料进行分析,采用大肠菌群纸片法检测各类餐(饮)具。结果 2006~2010年餐(饮)具合格率为86.9%,呈逐年升高趋势,差异有统计学意义(P﹤0.01);集体食堂合格率高于招待所、服务中心(P﹤0.01),碟、碗、刀合格率高于筷子、餐桌(P﹤0.01)。结论针对该部餐饮具消毒现状,重点加强小型规模单位餐饮具的消毒管理,强力推行餐(饮)具集中消毒,采取综合措施提高餐饮具消毒卫生质量。
Objective To understand the food units (units) of People’s Liberation Army Food and Beverage (disinfection), to prevent food-borne diseases caused by dirty tableware. Methods A monitoring data of the disinfection effect of meals (drinking) in a certain unit of the People ’s Liberation Army from 2006 to 2010 was analyzed, and all kinds of meals (drinks) were tested by coliform bacteria paper method. Results The passing rate of drinking (drinking) from 2006 to 2010 was 86.9%, showing an increasing trend year by year with a statistically significant difference (P <0.01). The passing rate of collective canteens was higher than that of hostels and service centers (P <0.01) , Bowl, knife pass rate higher than chopsticks, table (P <0.01). Conclusion In view of the status quo of disinfection of tableware in the ministry, the disinfection management of tableware for small-scale units should be strengthened with a view to vigorously promoting the centralized disinfection of meals (drinking) and adopting comprehensive measures to improve the quality of tableware disinfection and hygiene.
