大蒜,古名葫,为百合科葱属2年生草本植物,原产欧洲南部和中亚。最早食蒜成癖的人是4500年前的古巴比伦国王,这位国王曾下令臣民向王宫进贡大蒜,以满足其饮食之乐。中国人食用大蒜的年代较晚,西汉张骞出使西域时带入我国,至今有2000多年的栽培历史。目前我国是大蒜种植面积和产量最多的国家,产量约占全球的四分之一。大蒜主要以蒜苗、蒜黄、蒜苔、蒜头供食,有“冬食黄、春食苗,夏初食苔、五月食头”之说。大蒜既可调味,又能防病健身,被人们誉称为“绿色食品”、“天然抗生素”。
