Meatballs are a meat product that Indonesians love very much. Due to the difference between mouse and beef, some businesses will use mouse meat instead of beef in order to obtain higher economic benefits. Indonesian scientists’ results show that FT-IR combined with the local least-squares method for quantitative analysis of rat meat in a beef-to-mouse meat blend in meatball formulations, while stoichiometry of principal component analysis can be used to distinguish Rat meatballs and beef meatballs.
