目的了解禹州市居民主要消费食品中常见食源性致病菌的分布状况,为禹州市食品安全风险评估和食品卫生监督提供有力的科学依据。方法从市场上随机抽取10类食品(生肉、动物性水产品、熟肉制品、冰激凌、果汁类、糕点类、凉拌菜、沙拉类、速冻熟制米面制品、即食非发酵性豆制品、蛋制品、米粉类)共计190份样品,依据河南省食源性致病菌检测作业指导书和国家标准检验方法 GB4789进行检测。结果 190份样品中共检出致病菌34株,检出率17.9%,其中沙门菌检出7株,单核细胞增生李斯特氏菌检出18株,副溶血性狐菌检出1株,创伤性狐菌检出1株,金黄色葡萄球菌检出3株,蜡样芽孢杆菌检出4株。结论禹州市居民主要消费食品中存在食源性致病菌污染风险,其中以生肉、米粉类、凉拌菜污染最为严重。
Objective To understand the distribution of common food-borne pathogens in the main consumer foods of Yuzhou City and provide a scientific basis for food safety risk assessment and food hygiene supervision in Yuzhou City. Methods Ten randomly selected foods (raw meat, animal aquatic products, cooked meat products, ice creams, fruit juices, pastries, sauerkraut, salads, frozen cooked rice products, instant non-fermented soy products, egg products , Rice noodles) a total of 190 samples, according to Henan Province, foodborne pathogen detection test instructions and national standards GB4789 test methods. Results Totally 34 pathogenic bacteria were detected in 190 samples, with a detection rate of 17.9%. Among them, 7 strains were detected by Salmonella, 18 strains were Listeria monocytogenes, 1 strain of traumatic foxtail, 3 strains of Staphylococcus aureus and 4 strains of Bacillus cereus were detected. Conclusion There is a risk of food-borne pathogenic bacteria in the main consumer food in Yuzhou City, among which the pollution of raw meat, rice flour and cold salad is the most serious.
