餐厅是生产和销售烹饪产品、同时提供筵宴服务的进餐场所,也是体现民俗和礼仪、供服务人员施展才艺的社会舞台。它大多开设在都会与集镇的闹市区、风景区、游乐区或车船码头,以名店、名师、名菜、名小吃、名席和优质服务作为经营手段,向社会提供多种形式的使用价值与交换价值,用物质生产劳动和服务性劳动为城镇居民和流动人口服务。餐厅包括许多类型,具有重要的社会功能。它的建筑风格和艺术装璜,是餐厅服务中的“硬件”,直接影响到餐厅服务技艺(餐厅服务“软件”)的发挥,直接影响到餐饮企业的经济效益与社会效益,应当认真研究。
