随着我国经济的发展,鱼的生产发展很快,市场上鱼的经营量显著增加,这就从客观上提出一个加强鱼的检疫问题。过去人们都比较关心肉类的检疫,检疫对象主要以肉品为主,而对鱼的检疫则不被重视。现在鱼上市数量多、品种杂,加强鱼的检疫工作势在必行。 1 鱼的特点与人的关系 鱼类除一般的营养成份和猪、牛、羊肉相类似外,其蛋白质的消化率和所含维生素与矿物质都远高于猪、牛、羊肉。鱼类肝脏所合碘,是其他各种家畜肝胜所没有的。鱼的另一特点是易于腐败,因其带着内脏、湿度大、体内酶的活力旺盛,高蛋白易受细菌污染变质,容易引起人的食物中毒。同时鱼的某些寄生虫病极易感染人,另外有些有毒的鱼人吃后能发生中毒,严重者致人死亡。源于我国勃海、东南沿海和长江口一带的河豚鱼就是一种毒性很强的鱼。它的毒素经高温和盐淹是破坏不
