本文对翡翠贻贝休闲食品的工艺技术进行了探讨,着重研究了调味料对翡翠贻贝的色泽、质地和风味等方面的影响,筛选了翡翠贻贝的最佳烘干湿度和烘干时间。
In this paper, the technological process of Emerald mussel snack food was discussed. The influence of seasoning on the color, texture and flavor of Emerald mussel was studied emphatically. The optimum drying humidity and drying time of Emerald mussel were screened.
