作为北宋的首都,汴京不仅是北宋王朝的政治、经济、文化中心,而且是当时最繁华的国际大都市。这里水路交通便利,不仅有东亚、南亚的商人,而且有中亚和西亚,乃至欧洲的商人来这里经商。相国寺及其附近地区就是一个商业中心。在皇城东华门外,东南方向有一条专门进行高档商品交易的小街——界身巷,位置类似北京的王府井,交易中一笔生意可达万贯。据宋神宗元丰年间统计,在汴京城向政府注册的大商号就有640多家,政府一年的商业税收就有 55万多贯(每贯一千文铜钱)。在发达的商业基础之上,饮食业也显示出空前的繁盛。
