扬州乳黄瓜栽培历史悠久,是扬州郊区传统的地方品种,适宜鲜食或加工腌制。菜用习惯于前期采收大瓜供应市场,加工腌制则采收幼嫩小瓜,故称乳瓜。经加工腌制的乳瓜具有鲜、甜、脆、嫩的特色,在国内外市场享有盛誉。但因乳黄瓜抗病性较弱,1978年前采用习惯的栽培方法,病害发生严重,产量低而不稳,正常年景,鲜乳瓜进厂量每亩只有800~1000斤。重发病年,往往造成失收。自1979年开始,我们改进了乳黄瓜的栽培技术,从而减轻了病害,使乳黄瓜的采收期从原来的55天左右,延长到75天以上;亩进厂量上升到2500斤左右,最高达4279斤,亩产值也从原来的80~90元,上升到250~300元。栽培技术的改进主要有以下几点:
