目的了解南通市餐饮具集中消毒行业的卫生现况,以便加强餐饮具集中消毒行业管理。方法采用现场调查和抽样检测方法,对南通市餐饮具消毒企业进行了调查与分析。结果所调查的55家餐饮具集中消毒企业厂房选址选择均符合卫生要求,但只有30家持有有效营业执照。从所调查的企业共采集不同标本550份,平均总合格率为87.3%,检出污染有大肠杆菌标本60份。结论南通市餐饮具集中消毒企业规模较小、条件较差、产品合格率较低,凡卫生设施符合要求、生产流程功能区布局合理的企业监测结果合格率较高。
Objective To understand the status quo of Nantong catering utensils concentrated disinfection industry in order to strengthen the centralized management of catering utensils industry. Methods Field investigation and sampling methods were used to investigate and analyze the disinfection enterprises in Nantong. Results The surveyed 55 catering utensils centralized disinfection plant site selection are in line with health requirements, but only 30 hold a valid business license. A total of 550 samples were collected from the investigated enterprises, with an average total pass rate of 87.3%. A total of 60 samples of E. coli were detected. Conclusion Nantong concentrated tableware disinfection enterprises small, poor conditions, product qualification rate is low, where the health facilities meet the requirements of the production process functional areas with reasonable layout of the corporate monitoring results pass rate higher.
